Quick treats to cook before you sit down with your your latest good book.

IIndividual Mediterranean Dips
Ingredients
2 Small Cucumbers (peeled and diced)
2 Small Green Bell Peppers (diced)
2 cups Cherry Tomatoes (halved or quartered if large)
½ cup Red Onion (minced)
1 tablespoon Olive Oil
1 teaspoon Red Wine Vinegar
½ teaspoon Salt (or more to taste)
¼ teaspoon Dried Oregano
add pinch Red Pepper Flakes
9 9-ounces Plastic Cups
2 (12 ounces) packages Pacific Foods' Roasted Red Pepper Hummus (or your favorite hummus)
1 cup Feta (crumbled)
1 Lemon (zest of)
add Pita Chips (for serving)
