The Recipe



Ingredients


Pastry:


  • 2 ⅔ cups all-purpose flour

  • 2 ⅔ tablespoons granulated sugar

  • 1 ⅓ teaspoons salt

  • 1 3/16 cups unsalted butter, cold

  • ½ cup ice water


Filling:


  • 4 cups chopped apples

  • ½ cup granulated sugar

  • 1 tablespoon apple pie spice

  • 1 ½ tablespoons cornstarch

  • 2 tablespoons unsalted butter


Assembly:


  • Heavy cream

  • Coarse sugar


Instructions



Pastry:


  1. Chop the butter into small pieces. Remove ¼ cup of the butter and return the rest to the refrigerator to keep cold.

  2. In a stand mixer, combine flour, sugar, salt, and ¼ cup of butter. Mix on low speed for 3–4 minutes until the texture resembles cornmeal.

  3. Add the remaining butter to the mixture and mix on medium-low speed until combined, leaving some small chunks of butter in the dough.

  4. Roll out the dough, cut into rounds, and place in pie molds. Refrigerate the crusts while preparing the filling and lattice tops.


Filling:


  1. Peel, core, and slice the apples into small pieces.

  2. In a large bowl, combine apples, sugar, apple pie spice, and cornstarch.

  3. Divide the butter into 4 pieces, cutting each piece into thirds, and set aside.


Assembly:


  1. Preheat your oven to 375℉.

  2. Remove the pie crusts from the refrigerator and fill each with ½ cup of the apple mixture. Press the filling down into the molds.

  3. Add three small pieces of butter on top of the apple filling. Add another ½ cup of apple mixture, pressing again to ensure the filling is compact.

  4. Top each pie with a braided lattice crust, sealing the edges securely.

  5. Brush the tops with heavy cream and sprinkle with coarse sugar.

  6. Bake for 25–30 minutes, or until the crust is golden brown.
